Lemon Herb Roasted Potato Salad

Ingredients

  • 2lbs baby gold potatoes, cut in half

  • 1C green onions, sliced

  • 1/4C parsley, finely chopped

  • 3 celery stalks, diced

  • 6 eggs, boiled and quartered

  • 1 jar April’s Lemon Herb Vinaigrette

  • Salt and pepper to taste

 
 

Directions

Pre-heat oven to 425

Line sheet pan with a sheet of parchment

Toss the potatoes with half a jar of AGH dressing, then spread them onto a sheet pan.

Roast for 35-40 minutes or until golden brown and fluffy in the middle

Assemble: Add green onions, parsley, and celery. Pour over the remaining dressing. Carefully toss with a rubber spatula. Salt and pepper to taste, and top with boiled egg quarters.Serve warm or at room temperature. This is also great the next day.
