Lemon Herb Roasted Spatchcock Chicken

Ingredients
1 4lb whole chicken
1 jar AGH lemon-herb vinaigrette
Salt and pepper
Directions
Preheat the oven to 400°
Prep Chicken: Using poultry shears, cut along both sides of the backbone and remove it. Turn the chicken breast-side up and press down on the breastbone to flatten it. Rub the chicken all over with half a jar of AGH lemon-herb dressing. Generously season with salt and pepper.
Cook: Transfer the chicken to a large cast iron skillet, skin side up, and roast for 30 minutes. Pour the remaining dressing on the chicken and return to the oven. Continue roasting for another 20 minutes until the skin is golden brown, and an instant-read thermometer inserted into an inner thigh registers 165°. Transfer the chicken to a cutting board and let it rest for 10 minutes before serving
